Laura’s Southern (Eugene) Chocolate Ginger Cookies
- 3/4 cup butter, softened
- 1 cup packed brown sugar
- 1/8 cup vegetable oil
- 1/2 cup granulated sugar
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 1 teaspoon vanilla
- 1 cup chopped Extra Dark Chocolate Buttons
- 2 1/2 cups flour
- 1 cup finely chopped crystalized ginger
1. Preheat oven to 375 degrees. Beat butter & oil with an electric mixer for 30 seconds, then add the sugars, baking soda and salt. Beat well, scraping the sides. Then add the eggs and vanilla until combined well. Continue to beat with the electric mixer and add as much flour as you can, then beat in the remaining flour by hand. Stir in the 70% extreme chocolate and ginger pieces. Leave some chocolate bits large if desired.
2. Drop rounded Tablespoonfuls onto an ungreased cookie sheet, and bake for 8 -10 minutes. Makes about 5 dozen 2 ½” cookies.
