Festive Chocolate Peppermint Cookies

I love making cookies and bake them year round. But there is something  undeniably magical about holiday cookie baking.  Maybe it is because every December we host an annual cookie exchange party. I invest weeks scouring my cookbooks, magazines and the interwebs for the perfect cookie inspiration.  This year I went with simple because sometimes you just want the perfect marriage of deep dark chocolate flavor and the invigorating freshness of mint.    
It feels like the taste of the holiday because Christmas and chocolate go together as naturally as chocolate and mint! 
Chocolate Peppermint Cookies 
1 1/4 cups butter, softened
1 cup white sugar
1 cup light brown sugar
2 eggs
1 tsp vanilla extract
1 tsp peppermint extract
2 cups all-purpose flour
3/4 cup Euphoria Chocolate Sunrise Baking Cocoa
1 tsp baking soda
1/8 tsp salt

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, cream together butter and sugars until smooth and fluffy. Beat in eggs one at a time, then add vanilla and peppermint extracts.
In a separate bowl combine flour, cocoa, baking soda, and salt; stir into the creamed mixture until just blended.
Drop by spoonfuls onto ungreased cookie sheets.  
Bake for 8 to 10 minutes in the preheated oven. Cool for a 5 minutes on the cookie sheet before transferring to wire racks to cool completely cool.
