If you want to extend the shelf-life of our truffles beyond their best-by date, we recommend double-bagging for moisture protection; once they're wrapped, they can be frozen until you're ready for them! Then, simply allow them to thaw for 24 hours in a refrigerator before taking them out of their double-bag.
