Chocolate Basics

Truffles are a specific type of chocolate that are based around a chocolate ganache filling; they can have a variety of external decorations, ranging from chocolate shells to nuts to powdered cocoa. Bonbons are also a specific confection, referring to chocolates with non-ganache fillings that are inside of tempered chocolate shells that are molded. Learn more about truffles here!

Artisan chocolates are chocolates that have been made by hand in small batches, typically with higher-quality ingredients than their factory mass-produced chocolate counterparts. Here at Euphoria Chocolate Company, we make our truffles and confections by hand in our in-house factory with PNW-based/local ingredients wherever possible, which means that we make artisan chocolates!

It all depends on what you like! There is no "best" amount of cocoa for chocolate to have. That's why there are so many different types of chocolate!

The percentage on chocolate refers to the amount of cocoa solids and mass in the final product. The higher the amount of cocoa, generally the darker the chocolate. Higher percentages of cocoa might make you think they are more bitter, but many things determine the the final bitterness of chocolate: tannin content, butterfat content, sugar content, etc.

When chocolate "turns white", it has bloomed. There are two types of bloom: sugar bloom and fat bloom. Sugar bloom occurs due to moisture exposure, resulting in a dry, grainy texture, while fat bloom happens when cocoa butter separates from the chocolate, creating a slick, grayish film; fat bloom usually occurs following exposure to high temperatures. Chocolates affected by either type of bloom are safe to eat, although the defect may affect the chocolate's appearance and texture.

Tempered chocolate refers to chocolate that has undergone the tempering process to remove impurities and help the crystal structure set correctly. Tempering, as a technique, prevents bloom, increases visual appeal, and improves the texture/mouthfeel of the chocolate. You can learn to do it yourself with our guide to tempering chocolate!

Yes, we have vegan chocolate options. Our 85% Dark Bar is solid cocoa product and therefore vegan/dairy-free.

Our baking cocoa powder is vegan/dairy free.

We do not ship internationally at this time.

Yes, we offer free shipping. However, certain limitations may apply:

  1. Orders totaling $75 or more in product, after applicable discounts, qualify for free shipping.
  2. Free shipping is not applicable to cold products such as Classic Truffles and Ultra Sauce; these items require expedited delivery services due to their refrigerated and perishable nature.
  3. Separate orders, or orders with multiple delivery addresses, may not be combined to qualify for free shipping.

Once your order ships, you will receive a tracking link via email.

Our shipping rates are calculated by the carrier and are based on the selected shipping method as well as the weight, volume, and destination of the order. Due to the perishable nature of our chocolates, express shipping is often required to maintain quality upon arrival. Shipping rates displayed on our website come directly from the carrier.

We recycle boxes from our factory where possible to keep our footprint low. Additionally, our paper void fill is recyclable at curbside; when we use them, our packaging peanuts are soy-based and biodegradable.

Cold Shipping Information

Only our Classic Truffles and Ultra Sauce require refrigeration due to their high fresh cream content. These items always ship refrigerated.

While the majority of our other products do not require refrigeration and remain shelf-stable at room temperature, we take additional insulated shipping precautions during the warmer seasons.

We take all reasonable precautions to ensure your purchase arrives in great condition. This includes using special insulating inserts, ice packs, and utilizing overnight and second-day shipping where possible. However, despite our best efforts, we cannot guarantee that carrier damage or temperature damage will not occur during transit. Please see the next question on this list for more information.

Yes. Everything ships with ice and insulated packaging during the warmer months. We also recommend utilizing overnight or second-day delivery options to a location where someone will be present to receive the shipment. Please note we are unable to provide refunds or replacements for melted products when a non-overnight shipping method is selected for destinations where the temperature is above 70°F.
