Gluten Free Peanut Butter Chocolate Chunk Cookies

  • 1 cup smooth peanut butter (or chunky)
  • 1 cup sugar
  • 1 egg
  • 1 egg white
  • 1/2 cup chopped 70% Dark Chocolate Buttons


Mix the peanut butter, sugar and eggs together; stir in the chocolate. Refrigerate for 15 minutes while pre-heating the oven to 350° . Scoop rounded teaspoons of dough onto baking tray and flatten slightly. Bake for 15 minutes, a little longer if you use a peanut butter with a higher oil content. Take out and cool slightly, then transfer to rack or plate. Makes about 2 dozen cookies.
