Chocolate Glazed Chocolate & Stout Beer Cake
Ingredients
Cake
- 10 tablespoons butter, melted
- ¾ cup Euphoria Baking Cocoa
- 1 cup granulated sugar
- 1 ⅓ cups dark brown sugar
- 1 cup strong stout beer like Guinness or Oakshire Overcast Espresso Stout
- ¾ cup plain Greek yogurt
- 2 large eggs (at room temperature)
- 1 tablespoon vanilla extract
- 2 cups all-purpose flour
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
Glaze
- 6 tablespoons Euphoria Baking Cocoa
- 5 tablespoons butter
- 1 cup confectioners’ sugar
- ¾ teaspoon vanilla extract
- 2 tablespoons hot water
Instructions
Preheat the oven to 350°F and prepare 9” spring form pan with butter. Set aside.
In a large bowl combine melted butter, Euphoria Baking Cocoa, granulated sugar, brown sugar and the stout. Whisk until smooth.
Whisk in the Greek yogurt followed by the eggs and vanilla.
In a separate bowl, combine the flour, baking soda, and salt. Add dry mixture to wet ingredients mixing all ingredients are fully incorporated.
Pour the batter into the prepared pan and bake for 45-60 minutes. To check doneness, insert a tooth pick into the center of the cake. If it is clean the cake is done
Let the cake cool completely in the pan.
While the cake is cooling, prepare the glaze. Melt cocoa and butter together over low heat. Once the butter is melted and fully combined with the cocoa move from heat.
Add the confectioners’ sugar and vanilla. Then stir in hot water 1 teaspoon at a time until the glaze is smooth and thick.
Once the cake has cooled, transfer the cake to a serving plate and pour the glaze on the cake. Let the glaze set for an hour before serving.
