Rayney Day Cookies
Ingredients
- ½ cup butter, softened
- ½ cup sugar
- ½ cup light brown sugar
- 1 tsp vanilla extract
- 1 large egg
- 1½ cups all-purpose flour
- ½ tsp baking soda
- ¼ tsp baking powder
- ½ tsp sea salt
- ½ cup chopped 70% dark chocolate buttons
- 24 whole 70% dark chocolate buttons (for topping)
- ½ cup rolled oats
- ½ cup sweetened coconut flakes (optional)
Directions
- Preheat oven to 350°F.
- In a large mixing bowl, beat the butter until smooth. Add the sugar, brown sugar, egg, and vanilla extract, and beat until light and creamy.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and sea salt.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Fold in the chopped chocolate buttons, rolled oats, and coconut flakes (if using).
- Drop rounded tablespoons of dough onto an ungreased baking sheet, spacing cookies about 2 inches apart (about 12 cookies per sheet).
- Bake for 8–10 minutes, or until the edges are lightly golden.
- Immediately press one whole dark chocolate button into the top of each cookie after removing from the oven.
- Let cookies cool on the baking sheet for 3–5 minutes before transferring to a wire rack to cool completely.
