Rayney Day Cookies

Ingredients

  • ½ cup butter, softened
  • ½ cup sugar
  • ½ cup light brown sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1½ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • ½ tsp sea salt
  • ½ cup chopped 70% dark chocolate buttons
  • 24 whole 70% dark chocolate buttons (for topping)
  • ½ cup rolled oats
  • ½ cup sweetened coconut flakes (optional)

Directions

  1. Preheat oven to 350°F.
  2. In a large mixing bowl, beat the butter until smooth. Add the sugar, brown sugar, egg, and vanilla extract, and beat until light and creamy.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, and sea salt.
  4. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  5. Fold in the chopped chocolate buttons, rolled oats, and coconut flakes (if using).
  6. Drop rounded tablespoons of dough onto an ungreased baking sheet, spacing cookies about 2 inches apart (about 12 cookies per sheet).
  7. Bake for 8–10 minutes, or until the edges are lightly golden.
  8. Immediately press one whole dark chocolate button into the top of each cookie after removing from the oven.
  9. Let cookies cool on the baking sheet for 3–5 minutes before transferring to a wire rack to cool completely.
